When Alex Davidson offers to host a birthday dinner, her friends already know they're in for a good night. But her most recent celebration for a close friend? That one set a new bar entirely, and Potato Utopia had a lot to do with it.
The gratins opened the night, topped with burrata, hot honey and parmesan, and they didn't last long. Not even a little bit. "They were super easy and the first thing to go," and honestly, looking at how she topped them, we're not surprised.
From there, the menu just kept getting better. A fresh garden salad with vinaigrette and rockmelon kept things light and bright, before a giant baked vodka pasta arrived as the kind of centrepiece that makes the whole table lean in. A birthday spread that had everything: colour, comfort, and a whole lot of flavour.
"I think the gratins are my biggest hosting hack," she said. "They elevated the entire meal."
That's the joy of Potato Utopia, they make you look good without making you work hard. A beautiful topping, five minutes of effort, and suddenly you've got a dish that guests are still talking about on the way home.
