Airfryer Marry Me Potatoes

Ingredients

  • 1 pack Potato Utopia Four Cheese Potato Gratins
  • 1 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 2 tbsp heaped sun-dried tomato pesto
  • 1 cup thickened cream
  • ½ cup chicken stock
  • ¼ cup sun-dried tomato strips, drained
  • Salt and pepper, to taste
  • ¼ cup grated parmesan, for topping
  • Fresh basil, chopped

Method

  1. Cook gratins in the air fryer at 180°C for 10 minutes.
  2. Meanwhile, heat olive oil in a pan over medium heat. Add garlic and cook for 30 seconds.
  3. Stir in sun-dried tomato pesto, cream, chicken stock, and sun-dried tomato strips. Simmer 2–3 minutes until slightly thickened. Season with salt and pepper.
  4. Transfer gratins to a baking dish and pour sauce over the top. Sprinkle generously with parmesan.
  5. Bake for 10–12 minutes or until golden and bubbling.
  6. Top with chopped basil and serve.
