Airfryer Marry Me Potatoes

Ingredients
- 1 pack Potato Utopia Four Cheese Potato Gratins
- 1 tbsp olive oil
- 2 garlic cloves, finely chopped
- 2 tbsp heaped sun-dried tomato pesto
- 1 cup thickened cream
- ½ cup chicken stock
- ¼ cup sun-dried tomato strips, drained
- Salt and pepper, to taste
- ¼ cup grated parmesan, for topping
- Fresh basil, chopped
Method
- Cook gratins in the air fryer at 180°C for 10 minutes.
- Meanwhile, heat olive oil in a pan over medium heat. Add garlic and cook for 30 seconds.
- Stir in sun-dried tomato pesto, cream, chicken stock, and sun-dried tomato strips. Simmer 2–3 minutes until slightly thickened. Season with salt and pepper.
- Transfer gratins to a baking dish and pour sauce over the top. Sprinkle generously with parmesan.
- Bake for 10–12 minutes or until golden and bubbling.
- Top with chopped basil and serve.
