Loaded Potato Gratin Taco Bowls

We've been loving the loaded potato bowls lately, so we put our own twist using our Potato Utopia Four Cheese Potato Gratin as the base.

Loaded with cheese, guac and pico de gallo… easy to say, we're obsessed!!

Ingredients (serves 4):

  • 2kt Potato Utopia Cheese Potato Gratins
  • 1 tbsp olive oil
  • 1/2 red onion, diced
  • 500g lean beef mince
  • 1 tsp each: paprika, dried oregano, garlic powder, onion powder, salt
  • 2 tbsp tomato paste

Guacamole:

  • 1 avocado
  • 1/2 lime, juiced
  • 1/4 red onion, diced
  • coriander, finely chopped

Pico de Gallo:

  • 2 tomato, diced
  • 1/2 lime, juiced
  • 1/4 red onion, diced
  • coriander, finely chopped
  • sprinkle salt

To top - light sour cream, coriander

Method:

  1. Cook the Potato Utopia Four Cheese Potato Gratin as per packet instructions.
  2. Meanwhile, begin cooking the mince. Heat olive oil over medium heat, add onion and sauté. Once cooked, add in mince and cook until browned. Stir through spices, tomato paste and 1/3 cup water. Continue cooking over a medium heat until sauce has thickened.
  3. For the guacamole - mash together avocado, lime juice, red onion, coriander and salt
  4. For the pico de gallo - stir together the tomato, red onion, lime juice, coriander and salt
  5. Once potato gratin is cooked, distribute out between 4 bowls. Top with mince and cheese. Place back in the oven to melt the cheese. Top with guacamole, pico de gallo and sour cream.
