Breakfast Bake
This loaded breakfast bake is the perfect way to enjoy our delicious, crispy hash browns. Not only can you make this ahead of time, but if you happen to have leftovers, you can freeze them for later!
Serves 8-10
Ingredients:
- 1 packet Potato Utopia Hash browns
- 5 eggs
- 150ml light cream
- 3 rashers short cut bacon
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp finely chopped chives
- 100g mozzarella cheese
Method:
- Preheat oven to 200 degrees celsius
- Depending on the size of your baking dish, fill with hash browns in a zig- zag until full
- Cook in the oven for 10-15 minutes or until slightly golden
- Meanwhile, par cook the bacon in a pan and mix together the eggs, cream salt, pepper and chives
- Remove the hash browns from the oven and top with the bacon followed by the egg mixture and top with cheese
- Cook in the oven for another 15 minutes or until the egg is cooked and the hash browns are golden
