Gratin Zucchini Wrap
Crispy potato gratin wrapped in zucchini, baked feta on top, finished with pine nuts, parsley and a squeeze of lemon.
A simple air fryer side that looks fancy, tastes incredible, and takes almost no effort.
Ingredients:
• 4 Potato Utopia cheese gratins
• 1 medium zucchini
• 40–50 g feta, crumbled
• Pepper, to taste
• 2 tbsp roasted pine nuts
• 2 tbsp fresh parsley, finely chopped
• Lemon wedges, to serve
• Olive oil spray (optional)
• Hot honey, to drizzle (optional but highly encouraged)
Method:
1. Air fry the potato gratins at 180°C for 8 minutes until heated through and lightly golden.
2. Meanwhile, use a potato peeler to slice the zucchini lengthways into 8 long ribbons.
3. Wrap 2 zucchini ribbons around each gratin and secure with a toothpick or mini skewer.
4. Top each with crumbled feta and cracked pepper.
5. Return to the air fryer and cook at 180°C for another 6–8 minutes, until the zucchini is tender and the feta is lightly golden.
6. Remove toothpicks, then finish with roasted pine nuts, fresh parsley and a squeeze of lemon.
7. Optional (but elite): drizzle with hot honey just before serving.
