Green Goddess Hash Browns

Remember the viral goddess salad? đ Well, it's even more crunchy and delicious on our crispy hash browns! Try this recipe below to impress everyone as a Summer canape or just as a treat for yourself.
Ingredients:
- 6 Potato Utopia Hash BrownsÂ
- 1/4 green cabbageÂ
- 1 Lebanese cucumberÂ
- 3 spring onionsÂ
- 1 cup spinachÂ
- 1 clove of garlicÂ
- 1 lemon (juiced)Â
- 1 shallotÂ
- 1/4 cup walnutsÂ
- 1/4 cup grated parmesanÂ
- 2 tbsp rice wine vinegarÂ
- Handful of basil leavesÂ
- Salt & pepperÂ

Method:
- Cook hash browns to packet instructionsÂ
- Finely chop the cabbage, cucumber and spring onions. Add to a bowl.
- Blend the spinach, garlic, shallot lemon, walnuts, parmesan, rice wine vinegar, basil, salt & pepper.
- Pour mixture over the cabbage bowl and stir till combinedÂ
- Place 1 tbsp of mixture on top of each hash brown and enjoy!Â
